Big day today. Got the go ahead from our customer to start there 42 inch Pompeii oven. Photo attached is the model my partner and I made for there approval. This will be my second oven and best oven. I will pick up the firebricks next week and have sourced a local supplier for our medium duty firebricks. I plan to use medium duty for the landing and its arch and also the vent area but thought I should double check on this before picking up my bricks.
My question is this.....If I go with light duty just outside the cook dome entry on the entrance floor and also its arch and transition area would it be better than using the more expensive medium duty for this area. My thinking is it will reach soak earlier and not steal heat from the cook floor and dome as much as a medium duty brick would for this area. I can go either way but want to do it the best way. As this oven is for a paying customer I want and need this oven to be perfect.
