This will work ok, I used this method for building a flat topped roof/door for a kiln, but remember that by drilling a hole through a brick you are weakening it and providing easier fracture.

Pretty cool! I don't see a problem with the approach. Should work just fine.

Different method for a flat opening

I wanted a flat opening for the oven, rather than an arch, simply for aesthetic reasons; but I didn't want a piece of angle iron showing as the support. I came up this this idea and it seemed to work pretty well.

I used a drill press and a masonry bit to drill through the bricks; the drill really easily especially with a drill press. I then used a piece of all thread as the support. I was originally going to use re-bar but I had an extra piece of all thread so I figured I would take it one step further and actually bolt it together.

Perhaps it is a terrible idea, I would love feedback.
