    It is not properly called an expansion joint nor is one needed. The dome will expand more than the floor due to the greater length involved. It is a construction joint and can be made as tight as you want. I prefer to build on the floor though.

    About 5mm should be plenty. Some builders have used corrugated cardboard which will burn away when you fire the oven.

    I cant see how the thermal performance can differ from either type of build.

    You have to remember that the "plans" are just a guide and a starting point.

    Well, in the Pompeii Oven Instructions they say that the majority of Italian ovens are built with the floor inside the dome and the main advantage is that it offers better thermal performance.

    I built my oven on the floor, why wouldnt you?

    Have you all, guys, built your oven(s) with the dome on the cooking floor ? Didn't any of you built it with the floor inside the dome ?

    Hi there !
    Could anybody tell me what would be the "ideal" gap between the cooking floor and the wall of the dome in a 36" wfo considering, of course, that the dome is outside the cooking floor.
    I'll use 32% firebricks.
    Any advice is welcome !
