Re: Expansion gap between cooking floor and dome
Either way, neither way helps an oven perform any better. Good luck with your build

Re: Expansion gap between cooking floor and dome
It is not properly called an expansion joint nor is one needed. The dome will expand more than the floor due to the greater length involved. It is a construction joint and can be made as tight as you want. I prefer to build on the floor though.

You have to remember that the "plans" are just a guide and a starting point.

Re: Expansion gap between cooking floor and dome
Well, in the Pompeii Oven Instructions they say that the majority of Italian ovens are built with the floor inside the dome and the main advantage is that it offers better thermal performance.

Have you all, guys, built your oven(s) with the dome on the cooking floor ? Didn't any of you built it with the floor inside the dome ?

Expansion gap between cooking floor and dome
Hi there !
Could anybody tell me what would be the "ideal" gap between the cooking floor and the wall of the dome in a 36" wfo considering, of course, that the dome is outside the cooking floor.
I'll use 32% firebricks.
Any advice is welcome !Tags: None
