    Jim, you say to forget the thermocouples, but what about for the breads? I guess you are happy to have the floor ones in place?

      Hard to imagine that the vermiculite is warmer than the oven floor. Did I read you right? If that is the case, I think it will even out and then become lower than the oven floor temps in the near future. Perhaps you're just boiling the water out of the vermiculite??? That stuff stays goopy for a long time.
      To put the floor probe in I drilled in from the side with a 22" bit. So the probe is in the firebrick about 1.5" from the surface of the firebrick. Not in the vermicucrete. Sorry I wasn't clear on that.
