Pizza Screens To Deliver Pizza To The Oven

Yesterday at work one of the guys mentioned that he used a pizza screen to make the pie on and then deliver it to the oven without the drawbacks of a sticking peel. He stated he got the info from pro pizza guys in New Jersey

Has anyone tried this and does it work?

Do you flour it like a peel or use .. OK gotta say it because this was the advise.... Pam spray

You use Pam spray and season it in your kitchen oven until it gets a patina (2 or 3 heats), then you never wet-wash it to maintain the seasoning. When using, you do not need to put anything on it. I sometimes use screens/pans in the WFO, but I do not cook Neapolitan style pizza as a rule. I take it off the screen/pan after a minute or so then finish it on the hearth for another 2-3 minutes for a nice NY Neo-politan.

How would you transfer it from the screen into the oven? The peel alows for an extended reach into the hot oven.

I just put a layer of cornmeal on the peel....pizza rolls right off.

I'm going to try it both ways, the peel is going to be the end goal to perfect. Sticking to the peel is how they invented calzone right

That makes sense OK tomorrow night first pizza bake. Think I have everything except enough dry fruit wood but I think I can pick some up tomorrow on my way to the property. Can't wait.

Well the screen works like a dream. Bought 3 screens at Cash and Carry. Seasoned them on the BBQ before going out to the property where the oven is. After delivering the pizza to the oven, after a minute used the peel to lift the pizza, removed the screen and turned the pizza. Wonderful tool.
