Re: do i need a chimney
A "beaver tail" design would allow you to put the chimney entrance at the front of the oven and then curve the flue back over the top of the dome and up from the back;
[ ] <----chimney at the back
[ ]___
[___ )_
(______ <----oven entrance
^
oven floor
The advantage being that you maintain the pompeii design/thermal heat retention (keep heat in the oven where it belongs) and not up and out the chimney which would occur if you put the chimney entrance at the back. Do some research and you'll find a better description of what I am talking about.

I'm with Mick here. You can get the fire and cooking done with no problem but it will be a nasty job to do it. Smoke in your eyes is not a fun thing...
