I have a pizza oven that someone else made and they used the ceramic blanket insulation under the firebricks, instead of the the FB cermaic board.
Does anyone know what the real difference is between the two?
Does one perform better than the other?
I am noticing that the floor temp is around 720F degrees, and the pizza base is cooking ok but then inside the dough is slightly undercooked. So we have to leave it in longer
This oven is a mobile setup that cooks many pizzas continuously. When there is a rush (cooking 20-30 pizzas an hour) the floor starts to lose its ability to cook the base all the way through. We would like to still try to cook them in about 2 minute intervals.
Does anybody know if the the FB board would help?
Basically we are trying to make this oven as efficient as possible, so any help would be much appreciated.
