    I have build this contraption sometime ago and used it now to cure my oven.
    With 500watt heating element similar to electric charcoal starter, my oven got to 450F in about 48 hours for about whooping $2.50 in electricity cost. Bricks were saturated to 410F
    So I'm thinking:
    1. heating oven with the heater and then finish with wood to 600-700 for pizza - should be fast
    2. use this contraption to control temperature during smoking.

    Sounds like it would work to me. Remember the first rule - there are no rules, if it works for you - it's all good.
