I thought that we had a set amount of brain matter, and when we fill it up with too much crap, we die.

    Opposing theories.

I guess we need a poll.

Everything I am reading suggests that you need the high hydration in both flour and cheese to prevent burning and the proper spring in the crust. Yours looks great, how are you avoiding the pitfalls of high heat on your recipe? What is the temp of oven you shoot for with this recipe?

Thanks Jim. I'm glad you liked it.

      I'm game for Food Network.
      Dave can make Good Eats!

But you are right about the flour. The Caputo performs so much better in the high heat environment.

When I use the standard bread flour, it still makes a good product, BUT... I usually cook a bit cooler than most around here. A 3 or 4 minute pie works for me, and I think my kids prefer it to the charring. They also like loads of cheese and toppings, so the cooler oven works better for this purpose.

But for authentic pizza, Caputo and a HOT HOT oven is the way to go.

Dave, such skilled hands; such poor politics.
Mate, do you recall a gentleman by the name of Idi Amin?
If your theory is correct, then a still-birth may well have been in order.
Mate, even down here in the Stone Country, we get bombarded by imbecilic analyses of (seemingly) imbecilic polls to sort candidates for the next presidential election in Your country*
        .

Oh Oh! Think I just shot meself in the flamin foot. Buggerit!
Maybe yet another Poll is in order after all.
But is a mere tick enough, or is reasoning required?
(Mate, when you find yourself stuck in a hole: stop digging, eh. anon.)
Who suggested politics a few days ago? Dave? George? I bet it was one of them feisty sheilas, for sure.
Asudavew. Love your images to bits. As Frances said: intimidating. Mate ,even in Australia, my view of the world is regarded as bent. You were the first pric on this site to help me post my appalling images, and I won't forget your generosity/openness. No offence intended.

        * Here in Oz we've recently suffered all the Crap associated with a Federal election. (At least we got it right, this time.) To be fed hourly crumbs re America's bun-fight is akin to water-boarding.
        Cull this James.
        Idiot Jeff.

            Indeed, but my theory is:
He had more brain matter to fill.

              Cranky? Sure, sometimes.

Old? You're only old when you're the same age as your parents... and I haven't caught up so far.

              Fart? Haha, I'm not saying.

Veggies? It comes in the booklet you get when you become a Mom, along with other phrases such as "be careful", "put that stick down before you take someone's eye out" and "I told you so".

Frances, associate luddite (and proud of it)
"Building a Brick oven is the most fun anyone can have by themselves." (Terry Pratchett... slightly amended)

                where did the vids go??

I guess I'm late to the party!

I'm finishing up my WFO, and learning to get better at handling dough.

Any update links? the links to 'dave's videos' lead to nowhere now. I went to the root of his picasa acct, and no pizza shaping vids seen.

                suggestions?

                Ben
