I would recommend not installing any thermometers, but do by an inexpensive infrared handheld. Then you can accurately measure floor temp and dome temp which is what you really need to know in my experience. I have no post history, but have built a couple ovens, the last being a 42" Pompeii type and I've cooked a lot of things in them. Have fun.
