I think they would crack. Try making a small temporary oven out of them and see how they hold up. If they work well, then you might want to proceed with building a more permanent. But the project is still a risk because or is novel and unproven.
I built my oven using an unproven method, but I am willing to treat it down and rebuild using a traditional method if it fails.

Large porcelain tiles as wall and roof
Hi,
I'm considering first pizza oven and have realised I have large format porcelain tiles to hand 60cm x90cm x 2cm thick. Could I build the basic walls and roof with these or would they as likely crack and collapse once a fire is lit. I would make a 'proper' base for cooking on and cut/insulate these as the upper half.
Is it even worth experimenting with or will they simply crack under the thermal gradient?
