James, I believe it should be in months. There are some of you that can do this in days to weeks, a few in years, most in months. I then suggest this:
1-4 weeks
1-3 months
3-6 months
6-9 months
9-12 months
1 year +

You make the final call.

When you use the individual tupperware containers, do you (a)spray lightly with oil (b) dust with flour or (c) just put into container as is.

I ask since I use oiled bags, and would like to try the container method

I ended up getting the equivalent of some "bus tubs" in the local department store, kitchen section (Big W)....they are great. even fit in my dishwasher - just

Something sort of obvious to add (possibly useful for newer members).........make sure whatever you use is "food grade" plastic

I usually store mine in a large bowl then separate them into small containers for the final proofing the next day.

I bought 12 of those small ziplock plastic containers to use.

I find they hold 1/4 of a batch dough well, and the dough does not seem to stick to them very much.

Now If I could only keep my lovely bride from using them to take her lunch to work......

These rubbermaid storage containers are just the right size for dough balls, they are cheap, and strong enough to be dishwasher cleaned. I poked a hole in the lid of each one for outgassing during cold retardation, but I don't know if that is necessary.

Thanks DMUN - I kept experiencing mini explosions in my refrigerator -- now I know to vent the containers!
