    Im new to all this What is the "window pane test"?

    LoL. Window pane test is to determine the strength of your dough. So if your dough has good stretch you can make it thin enough that you can see through it "like window pane" and if it's not strong enough it will break.

            The test should allow you to see almost into or through the dough to check if the gluten strands have developed or if you have to knead it more.
