Einkonr Wheat Flour - Gluten Free

I just purchased some einkorn flour. I am diabetic and the typical flours spike my blood sugars.
I love everything bread.
I want to use a pizza stone to bake ____ using the einkorn flour 9in a conventional oven:
Bagels: but I would like specifics about how to do it.
Torpedo Rolls. Saw your video on how to form them, but how do your bake them on a pizza stone?
