    No there are quite a few different Caputo 00 flours.

    The variety specifically for pizza come in a blue bag (25kg) or red bag (1kg) and both have a pizza on the front.

      Wozza - I have been using Tandaco Dry Yeast, it comes in 7g sachets and is available from the chain stores. I use one 7g sachet in 1kg of flour with 650g water and salt and a little olive oil. That works fine for me.

      It is the basic Pizza Dough by Weight recipe from FB and I have tweaked it over time to get what I want from a base. I have settled on using 700g Caputo 00, 200g wholemeal and 100g fine semolina. That gets me a thin crisp base and and edge with some rise and substance.

      I guess it depends on what you prefer but that one works for me.

        Nearly due for new bag of caputo 00, a--h--les put it up to $66. Might give Basile a call and see if they can do better. Will mention your pricing.

          The 00 bit is the fact that it is a finer ground flour than normal flour. A pasta flour is 10 to 11 per cent protein. A strong flour for pizza is 14 to 15 per cent protein. Both can be 00 it's just a finer milled flour. An Italian flour for pizza usually has a pic of pizza on the label if it doesn't its a good chance it's for something else.

            Greenman you should look at buying the cylinder tub of IDY at woollies instead of Tandaco.
            Costs 10% of the price, works great and lasts for years.
            Can't remember its name but its like a dark red/maroon tub.
            I use one teaspoon in my mix over 3 days does 7 pizzas.

              Thanks for the tip Applor - I believe I have seen it on the shelf, I will give it a go. Do you keep it in the fridge once you open it?

                Keep it in the freezer.
                Was still working fine a year past the best before date.
                I use one teaspoon in my slow rise dough for 7 pizzas.

                  Picked up my second bag of caputo pizzeria flour. They increased price from $50 to $64.Not nice but still worth it.

                    One of my fav pizzerias is using kialla organic pizza flour and I am about to order a couple of bags of it at $15 for a 5kg bag I think that is pretty good value and the results they get from it are just great. 13% protein. Reason I use it is because it's organic and I want the best ingredients/toppings available for my pizzas.
                    Just made a few test batches with the lighthouse bread and pizza flour and is fermenting as we speak, will see how that goes in the WFO in about 3 days.

                      I'm in Brisbane and I ended up contacting Basile Imports and was referred to a few fruit shops that sell caputo flour:

                      I've been to all of them and have only been able to get 1kg Caputo Chef flour for ~$3-4 / kg. New Farm Deli seemed to have the best range of other stuff including fresh yeast and salamis etc. Worth a visit if you want some exotic Italian ingredients.

                      I'm now getting more serious myself and i'm looking for Caputo Pizzeria flour in 25kg bags for a reasonable price (I think $140 + shipping from lario.com.au is a bit much). So I contacted Basile directly and they basically said they can't sell to the public even if I'm buying 25kg bags. Next step would be to try to get one of the above to special order it for me from Basile. I also heard they buy the 1kg bags in crates of 10 so if someone is after 10kg you could probably ask one of the fruit shops to order in a crate for you.

                      Does anyone in Brisbane know the best way to get Caputo Pizzeria flour for cheap?
