  • bone in smoked ham, ready to cook

    I hope someone can help me with this. I purchased a product called "bone in, smoked ham, ready to cook". I am not sure how to approach it. The instructions say to put it in a baking dish with a little water and bake in 350 for 18 minutes per pound. Sounds boring to me!

    I am planning first to soak it in water for a while to dilute the salt a bit. Any idea what to do next?

    Do a search for Dr. Chicken's double smoked ham. It is meant to be done in a smoker, but doing it in a wfo would be just as good.

      Hi,
      I cooked a leg of ham last xmas in the WFO and it turned out wicked! We first scored the fat in a crisscross pattern and put it in a baking tray in a fairly hot oven long enough to get the score marks to open up and some of the fat to start running (about 5 - 10 mins). We then took the ham out, and marinated it while I pulled the coals out and let the oven cool.

      When we put it back in, it took about 45 - 60 mins...just keep an eye on it and keep marinating it with the juice in the pan. When it comes out the skin should be sticky/sweet and a touch crunchy with a hot moist meat...very nice!!

        I forgot to update. I ended up soaking that ham for one hour in water to get rid of some of the salt. I seasoned it with pepper, paprika and covered with brown sugar. I put it on a rack and I poured half gallon of water in the pan and I dumped some fresh rosemary.

        I kept the whole thing covered most of the time, it took about 3 hours in I believe 400 degrees.

        The ham was very good and tender, I wish I had trimmed some of the fat before. It was still rather salty, next time I will keep it in water for much longer.

          Try a Coke(good old Clasic Coke). Score the ham put in the the oven (WFO) to let the fat start to render and brown. Remove from oven pour the coke over the ham, cover and continue to bake. Or do the same thing with Guiness Beer...... mmmmmgoooood. Turns out moist and tender everytime. The Coke lends a sweeter taste, but either one works great!
