Do you need to clear the dome to cook other items other than pizza? Seems like a long process to get the oven to a point where dome is white just to let it cool back down. Curious how others are cooking items like steak and fish?

I never waste wood to fully clear the dome when shooting for lower temps such as for chicken and roasts. If I have a clean dome on the decline, and am a little low on my target temp, I will recharge with lump charcoal in a ss charcoal starter chimney.

For steaks, I fire until I get a full bed of red glowing coals for "caveman" or "dirty" steak.

For fish in the WFO, I like salt baked whole fish.
