Did you know that it is possible to buy 1/2 height blocks. 4" in stead of 8" You may have to go to block company instead of a big box store.
That may give you more options on the Block stand height.

Block stand height
Hello everyone, just wondering if there would be any issues with structure or stability if the block stand were 5 courses high, rather than 4 courses high. Reason I ask is because I'd like to build an attached counter that was the same height. I am using the pompeii oven plans, for a 36" oven. Would I need a wider foundation and base, or would the dimensions in the plans still be ok, with the increased height? Any opinions and suggestions would be greatly appreciated. Thanks very much.
