  • Fitting arch to dome

    We've put our Ristorante 130 together and are about to apply the mortar to the joints.

    The arch fits in a way that there is a large gap between the oven floor and the landing.

    Which is better:

    Fill the large gap with mortar?

    or

    Grind down the back of the arch to get a better fit?

    Perhaps the oven was designed this way by the manufacturer. I've done a similar thing with mine to isolate the arch from the inner parts of the oven to reduce heat conduction to the uninsulated arch. I use vermicrete. You should ask the manufacturer of the oven.
