My fridge arrived and I was happy to see I had actually measured correct- It fits like a glove:

Hope to get the granite landing done this weekend and then finish things next week. I have my biggest pizza party yet tomorrow with 30 people coming. I made 35 balls of my pizza dough recipe I posted on here recently and am looking forward to using the 49" oven to its capacity.Last edited by gt40; 09-09-2011, 01:24 PM.

They are usually supplied with a ceramic sheath because they are designed to cope with much higher temps. all the sheath does is protect the probe from damage. If you prefer you could use a metal sheath but it will conduct heat much more than a ceramic one. Stainless steel is a way poorer conductor than copper pipe and is a better option IMO.

Interesting. Why have a porcelain sheath? I understand about not having a tight fit to deal with expansion issues. I would think the temps we are dealing with, the metal will take many years to degrade.Originally posted by david s View PostThe pyrometer should have a porcelain sheath.
