My fridge arrived and I was happy to see I had actually measured correct- It fits like a glove:

Hope to get the granite landing done this weekend and then finish things next week. I have my biggest pizza party yet tomorrow with 30 people coming. They are usually supplied with a ceramic sheath because they are designed to cope with much higher temps. all the sheath does is protect the probe from damage. If you prefer you could use a metal sheath but it will conduct heat much more than a ceramic one. Stainless steel is a way poorer conductor than copper pipe and is a better option IMO.
