As others I like mine slightly higher. So the rule of thumb I have worked on (for my own oven )is bottom of my elbow (with arm bent).

That comes down to the user and what they are after. I'm pizza centric, it's the only thing that matters to me and too low of a hearth can be miserable.

I like a bit more hands on method. Hold a peel(or broom since you probably don't have a peel yet) at the top of your chest like you are about to launch a pizza. Hold it there and have somebody measure it's height off the floor. That gives you a good idea of how high your hearth needs to be so you aren't bending over to use the oven or look inside. I bet it's higher then you imagined.

My floor is 41 inches and I am 5'10. I think I got the numbers from the plans but in reality it would have been better if the floor was probably 46 inches.

You guys are doing a great job keeping up with my 1 million questions. I just want you all to know I really appreciate the help.
That being said another question
What is the distance from the ground to the floor of your oven. Just contemplating putting my oven floor around 48" off the ground? What is a comfortable working height?
