      Cold oven to to Pizza in 60 minutes!

      I wanted to find out how quickly I could make Pizza starting with a cold oven. I might need to do this in an emergency (yes, the need for Pizza is sometimes an emergency!)

      So last night I made a large than normal initial fire and stoked it well for 45 minutes before pushing it to the side.

      I was able to make the first pizza in less than 60 minutes! And it was good!

      I also learned that this is not nearly enough time to saturate the bricks with heat, and by the time I made my last pizza (the fourth) the bricks had cooled quite a bit and it took about 4 minutes to cook instead of 1-1.5 minutes.

      I won't be doing this often... but nice to know that I can!

        Good to be prepared! But what about the cold beverages required for such an emergency???

                    Ok, next photo will have fire! Unfortunately it only gets dark at around 9.30pm right now in NorCal and by then all the pizza is eaten and I am thinking about bed!

                      • It's been two years since my last post! I thought I'd give a quick status update.. However, it's easy - and the summary is that the oven continues to work great! I have definitely learnt a lot more about the personality of my oven and I use that to my advantage. For instance, I actually operate the oven at a slightly cooler temperature than I did when I was first starting out. I find I get better, more consistent pizzas that way, even though they take a minute or two longer to cook. The other thing I have learnt is how to keep the oven at a consistent temperature for a very long time by adding just the right amount of small pieces of wood at the back and sides.

                        I have also expanded what I cook in the oven and I now have cooked both Thanksgiving and Christmas turkeys in the oven. Nothing beats a turkey cooked for 6 hours in a WFO! (draped in bacon of course!)
