Which is better to fill the area between the oven and the outer structure, perlite or vermiculite?

The one you can source cheaper. There will be no measurable difference one vs the other

Several builders who have dry poured P or V have blocked out the corners of the structure (with left over sheet rock or backer board) to reduce the volume of dry P/V in the corners where it is not needed.

Thanks. They are both around the same price. Amazon - free shipping. The gap between the oven and the structure wall is not that far. I want to be able to cover the dome up to the roof peak.

Or use empty plastic bottles with their lids screwed back on.
