    How long can you expect for the floor temp to maintain a temp of 360 C to 400 C before it needs to be recharged with hot coals when baking pizza ? I find my floor cools below the 360 C mark in about 20 min from 400 C before I cover with hot coals to bring back the temp and continue baking.

    I've never really gone by time, but I find that after about 6-8 pizzas on one side of the oven, it makes sense to respread the coals and then move the fire to the other side. (As I can bake two to three pizzas at a time, that means about 12-24 pizzas before I move the fire to the other side. Not very scientific, but it works!

      Thanks for the info. I never really moved the whole fire from one side to the other, but I will try that. I usually just move a fair amount of coals onto the cooled floor to recharge it then sweep everything back onto the mainfire-clean the floor and start cooking again.

        You're welcome. I find that I prefer to cook on one side, but doing the swap over works best, in my view, for floor temperature.
