The back of this stone will be a part of the throat of the flue will it get to hot I understand 840'c it starts to break down

You sure about that? The gasses coming out of my oven are pretty damn hot. I have never measured it, but it has to be close to the dome temp which exceeds my laser's ability (950 F plus). Why wouldn't it be, that's where it's coming from. My IR thermometer reads to 2470 degrees F. The highest temps I've ever recorded in my dome were just under 1200 degrees. 840 C is equal to 1544 F.
I doubt you'd get that hot in the vent but I don't know for sure.
