    Last night was a great night! First full burn in the oven and after 2 hours the almond wood fire cleared the dome! (I expected it would as I have read but it was still a thrill to Actually see it happen).
    Just as the dome cleared, I took some temp measures: I have k-wires 1 inch from fire in the top of the dome and mid wall, Additional probes Outside the dome on top, and mid wall, under the 2 inch floor tile, under the floor splits (on the insulation), and under the floor insulation.
    Dome IN: 586 F
    Dome Out: 515
    Wall IN: 505
    Wall OUT: 242
    Floor 2in: 766
    Floor Out:347
    Base: 94
    The laser thermometer was 354 on the dome arch 8 inches from the floor, the adjacent entry arch (with 1/4 gap stuffed with ceramic rope - no caulk) was about 276. The outer edge of the entry arch at the same height was 165. BTY I did not put any break in my floor tiles, just at the arch /entry connection and I will likely repeat at the Entry / decorative arch connection.
    The dome continued to heat, but I turned my attention from thermometers to PIZZA Click image for larger version

        586 was the temp one inch in at the top when the entire dome cleared (for the first time). The surface of the brick was 》800

          DVM,

          Congrats on the maiden voyage................been fun to watch your build! You have some serious TCs, I am only installing two to check brick saturation for baking, going to use thermo gun for pizza.

            ah - the thermocouple. I get it now. I was thinking that my dome only clears at about800, so wondering if it was a typo!

              Enjoyed a full evening of Pizza fun.. Prepped 32 dough balls last night. Six families joined ours for dinner tonight: 25 pizzas consumed, One up in flames, three cooked as "Desert pizza" (chocolate and strawberries on dough), two cooked as "bread sticks" and one never made it to the oven but was fully enjoyed as "play dough". Put the door on and prepped some french bread for baking tomorrow after church (we will see if the oven remains hot enough).

                Pizza was great last night and baking from the same fire went well today. At 1pm the oven (with the door shut since last night) was 550 F. Baked 13 250 g loaves. My son is prepping dough tonight for a get together with his friends tomorrow evening - just before school starts. Glad to see the oven in action; functional but far from finished.

                  25 five pizza no 13 loaves of bread, what is next 10 lbs of prime rib.........almost to the functional part. Just need to add the anchor plate and mortar down with brick.

                    Had not considered prime rib.......I had a meeting late-night so my son was the pizza guy for his friends. 24 pizza served (Including two gluten free from a store bought mix). Closed the oven up last night at 10pm. Prepped to bake a few French loaves. Temp is 575 in the back wall 24hours later

                      I am very jealous, I wish I had gone with a Pompeii

                      My screen name alludes to my love for them. I'm hoping to start the works in for a 42" by the beginning of next spring. There might be a couple of monkey wrenches thrown in that could delay the process, but I plan to at least get started, and early too.

                        So this Pizza cooking and consuming has cut into my build time - but I like it.
                        In prep for building my surround I read that 4 inch wide cinder blocks were a PITA to work with.... But I just finished building a sphere out of rectangles so I figured how hard can it be?Click image for larger version

                          Now I know, ... Cinder blocks 4 inches deep are a PITA to work with. They are not the least bit forgiving when it comes to the placement of vertical re-bar; when the blocks are staggered near the corners - the cells do not always / easily line up. I placed horizontal re-bar at every two block interval. This leaves very little space for cement to pass.... So I filled the height of two cells - Then placed the horizontal re-bar, then repeated to achieve the height needed. You get the idea.
                          I have durock to cover the front to the edge of the outer arch and to bridge the gap in the front of the chimney.
                          I plan to put a band of 8x2x16 inch blocks on top of the enclosure with the back edge supported on angle iron, across the front of the oven and along the top of the surround wall with a 3 inch overhang; to be stucco'd. I will have a tin roof slanting back with an over hang off the back (this will form a "porch" for the tortoise enclosure in the back 2/3 of the oven base). Given the elevation of my yard and the height of the enclosure - the Tortise will be the only one to see the tin roof.

                              I like it. I used metal stud for my enclosure, which for the record is also a PITA.

                                Very nice. Congrats on your progress and thanks for the insulation and enclosure photos. The temp readings are helpful too. I am insulating and enclosing next.
