I think it looks pretty good now. I think some high temperature silicon (Permatex Ultra Copper is the best I could find) between the vermicrete capping and the flue pipe should seal that area well and prevent cracking from the expanding stainless pipe. If you wrap some corrugated cardboard around the pipe, vermicrete around it, then remove it a couple of days later, you can then fill the space with the silicon.
