      I've got to admit I'm getting a bit excited at this point, more than for any other oven lately. Usually its a bit of an anticlimax really , you just know they done the hardest work and you get to see the pic of there fourth pizza claiming it was the first.
      I hope you get to eat that first slice, I recon you deserve it

            Thanks Greenman! Inspiration is alive. To actually stop building long enough to cook something is like shifting gears though. So many other projects too...but I do love pizza sooo...

            Cobbler, thanks again for your great ideas, and to all you guys. You've got a hand in this project, a very important one. I'm excited too Cobbler! Its been a long time building, can't believe I ran out of bricks again!

              This is the way to do it ... This is the "Ridge didge " first pizza pic.
              Note the "black oven walls " in the background. The pizza trays.! This was real early days, bare dome, no insulation!..... Best tasting pizza.
              And the only reason I have those "ridge didge " pics cause no one was willing to stick their hand in the oven

                Looks good Cobbler, makes me hungry. Interesting the trays, might that be the better way to go? I've read that people mop the oven floors to cool them off, but a tray would both be cool and readily transfer heat to the dough. What do you think?

                Another project we have coming up is making all our own tools and trays. For that we need sheet metal so one of these days we'll have a city trip to find sheets that are thick enough. How thick is a question... Have a metal tube ring roller so could roll rings in needed pizza sizes to support trays, then spot weld them on.

                An amigo here suggested using bamboo for tool handles. Stuff is already round and light and strong. Any part going into heat would have to be wrapped, but it seems a good idea.

                  I love a Neo style pizza, a few topping cooked fast and furious on the hearth bricks can't beat it but trays still have there place.
                  Flat trays can be a pain, they buckle in the heat so they heat the bottoms unevenly. They don't crisp the base as good as you would like in fact they can come out pretty soggy as the trap the moisture.
                  But there's some things that can even things out .
                  I have a few gatherings and I use trays as Aussies like to go over the top with there toppings. They can overbuild them on a tray and you can still get them in the oven. Wait till they firm up and get them off the tray so the bases firm on the hearth floor. I also use trays with holes in the bottom. No buckling and the base firms up faster.
                  As for moping the floor for pizza I don't bother with a mop now days unless I'm baking bread . I just slap the hearth food with the flat of the peel a few times and the ash lifts off and the heat takes it up the chimney. The mop and bucket are just another tool to clutter things up and the child bride has long figured out that the intense heat has killed any nasties anyway.

                          Got it hot as it would get without insulation yesterday.



                          Made some bread which turned out really well.



                          ...and 3 pizzas...



                          Which turned out not so well. Got it onto the pizza peal but could not get it off. Think I should have used a lot more flour under.

                          But! Tasted okay. Too much basil and oregano for me, tended to bury the flavor of the other stuff. I'll put less next time.

                          First ever pizzas though! Fugly as hell but, some experience to build on.

                            Not only could I not get the pizzas to slide off the peal but realized last minute that we lacked a clean mop.
                            Plus, haven't gotten to making the tools yet so one short peal is all we had and a stick to push stuff around.





                            No door yet so we used hardiflex offcuts.
